Soft, ooey, gooey chocolate chip cookies!!

So, T has a favorite cookie. (I mean, who doesn't?!) A soft and chewy chocolate chip cookie that stays soft and chewy once it's cooled off.. 

This is something I have attempted countless times, without success! I have an awesome Choc chip cookie recipe, and I have tried tweaking it, but the cookies always end up hard after a day. I also have requirements.. I don't want to chill the dough, and I don't want to add cream cheese (see reason 1!)
Well, folks!!! I have found the cookie to beat all cookies!!!!

1 box yellow cake mix
1 stick butter (soft)
1 egg
Chocolate chips

Mix everything but the chocolate.. I used my hands, mix in chocolate. Put on buttered cookie sheet, bake at 350 for 7-10 minutes!!

Super easy, fast and yummy!

The simple life

As I sit here drinking my morning coffee, I can hear birds chirping in the tree outside our window; and besides the occasional vehicle (usually a tractor) driving by, that is all I hear! No loud sound systems in neighboring houses, no arguing neighbors yelling obscenities at each other in their front yard, not even a lawn mower.. Because around here, the lawn mowers are cows and horses! The Green Acres theme song has been playing on repeat in my head since we moved in, "farm living is the life for me. Land spreading out so far and wide, Keep Manhattan and give me that countryside!" While I've never been to New York, I can agree with that statement.. I would much rather hear nothing than to hear car horns and road noise! 

There is a down side to living in the middle of nowhere though, a lack of resources when it comes to groceries! Yes, there is a walmart and an albertsons.. But they are small with limited selections!! So for my 3 new recipes I am making today I will make due and use substitutions where necessary!! I will post again with what I made and how it turned out!!!!

Change is coming

In 2012 my cowboy decided to take a job requiring a lot of travel.. It was a dream come true for a while! He loved the work, learned a lot, and made a bunch of friendships that made the long days away from home bearable. 

Fast forward 2 years.. we have a precious new born daughter and he is ready to be home every night, to watch his daughter grow before his eyes, not in pictures and videos. We prayed for a job that would bring him home to us. And as He always does, The Lord provided!!!

In a few short days our sweet family of 3 will move to the border of Texas and New Mexico, so that T can follow his dream of working on a ranch!! 

This blog will document the changes we are making.. Living more simply and less distracted! 

We have lots of adventures ahead of us, and I'm excited to see where God will take us!!
